The agar-yielding species of Gracilaria and Gelidium grow in the waters along the coast of Japan, New Zealand, South Africa, Southern California, Mexico, Chile, Morocco, and Portugal. Agar is a linear polysaccharide built up of the repeating disaccharide unit of (13)-linked -D-galactose and (14)-linked 3,6-anhydro--L- galactose residues.
